Postcard 1870 Siege of Paris Christmas Menu 99th Day Rare Reprint Escoffier

On Christmas Day 1870, besieged Parisians dined on elephant consommé and roasted cat flanked by rats — this ornately bordered menu card from the 99th day of the Prussian siege captures one of culinary history's most extraordinary moments, when the chefs of Paris turned desperation into dark artistry. The menu, headed 99ème Jour du Siège, lists hors d'œuvres of butter, radishes, stuffed donkey's head, and sardines; potages including a consommé made from one of the Paris Zoo's two elephants, Castor and Pollux; entrées of fried gudgeon, roast camel English-style, kangaroo stew, and bear ribs with pepper sauce; rôtis featuring wolf haunch, cat garnished with rats, antelope terrine with truffles, and watercress salad; and entremets of rice cake with jam. The wine service is lavish by contrast — Mouton Rothschild 1846, Romanée-Conti 1858, and Grand Porto 1827 — a surreal juxtaposition of the cellar's finest against a table set by siege. This reproduction is published by the Musée Escoffier de l'Art Culinaire in Villeneuve-Loubet, the birthplace of Auguste, the great chef who helped codify classical French cuisine a generation after this fateful meal.
